Understanding Hop Types: Bittering, Aroma & Dual-Purpose
Not all hops are created equal. When building your hop schedule, it helps to understand how different varieties perform in the boil and the fermenter:
- Bittering Hops: Typically high in Alpha Acids (AA%), these hops are added at the beginning of the boil (usually 60 minutes). They provide the crisp bitterness needed to balance the sweet malt backbone of your beer. Examples include Magnum and Pacific Gem.
- Aroma Hops: Lower in Alpha Acids but rich in essential oils. These are added late in the boil, in the whirlpool, or as a dry hop to impart distinct flavours and aromas—from citrus and tropical fruit to floral and piney notes.

How does Brewshop package and store hops?
Hops are highly sensitive to oxygen, light, and heat. To guarantee absolute freshness, we repackage our hops into light-proof, vacuum-sealed foil bags. They are kept strictly in cold storage at our Hamilton facility until the moment they are dispatched to you.
How should I store my hops at home?
You should store your hops in the freezer. If you have an open packet, try to squeeze out as much air as possible, tape it completely shut (or use a home vacuum sealer if you have one), and return it to the freezer. Properly frozen and sealed hops will retain their brewing value for 1 to 2 years.
What are Alpha Acids (AA%)?
Alpha acids are the primary bittering compound found in hops. When boiled in wort, they isomerise and create the bitterness in your beer. A higher AA% means the hop has a stronger bittering potential. Because hops are an agricultural product, the exact AA% will vary slightly from harvest to harvest—we always list the current batch's AA% on the packet.
Pellet Hops vs. Whole Cone Hops: What’s the difference?
At Brewshop, we primarily stock T90 Hop Pellets. Pellets are made by milling whole hop cones and pressing them through a die. They take up less storage space, have a longer shelf life, and provide about 10% better utilization (efficiency) in the boil compared to whole cone hops. They also break apart easily in the fermenter, making them ideal for dry hopping.

Dry hopping is the process of adding hops directly to your fermenter during or after primary fermentation. Because the beer isn't boiling, the alpha acids do not isomerise (meaning no bitterness is added).
