This is a recipe for a modern hoppy lager style, currently growing in popularity on the West Coast of the USA. For style and balance, think somewhere between a NZ Pilsner and a new-school West Coast IPA – showing the finesse and sessionability of the former and the hop character and snappiness of the latter.
The recipe is built over a Pilsner malt base, which provides light notes of toast and honey, and is hopped with two relatively new US hop varieties (Krush and Strata). These hops bring an intense berry-like and tropical-fruit character to the final beer, rounded out with a pleasant amount of ‘dank’ hop character from the Strata. Fermentation with the novel lager hybrid NovaLager allows for uber-clean expression of these base ingredients and some contribution towards bio-transformation from the cool whirlpool hops.
Novalager is the recommended yeast for this brew, however BRY-97 also works well to create a clean, crisp finish when brewed at cooler temperatures. Diamond lager yeast is best for a more traditional, yet still hoppy, approach.
